- 3 small fresh orange or yellow chilies, chopped coarsely
- 3 large garlic cloves, chopped coarsely
- 4 shallots, chopped coarsely
- 3 tsp. ground turmeric
- 1 tsp. salt
- 12-15 black peppercorns
- 1 lemongrass stalk (white part only)
- 1-inch piece fresh ginger, chopped
- Put all the ingredients into a food processor or blender and process to a thick paste, scraping down the sides occasionally and making sure they are well combined.
